Beet and Carrot Soup

Beets are a wonderful root veg that add brilliant colour and flavour to this soup. In addition they bring a punch of calcium, iron, potassium and Vitamin C not to mention a lot of fiber. Constipation can be a big issue during pregnancy – especially after child birth, eating more fiber can be a natural way of helping your body to help itself.

Ingredients
5 medium beets, peeled with ends cut off and cut into large cubes
3 large carrots, peeled with ends cut off and cut into large pieces
8 cups (2L) of homemade veggie or chicken broth – see video below OR 4 cups store bought reduced sodium broth and 4 cups of water
1/2 tsp sea salt **no salt if using store bought broth
1/8 tsp black pepper
1 tsp each garlic powder, paprika, chili powder (use 1/2 tsp of chili powder for a milder soup)
1/2 cup skim milk

In a large stock pot boil carrots and beets, salt, pepper and spices in broth for 1 hour until the veg is very tender.

Use a hand mixer or blender to puree the soup, adding the milk as you go to make it creamier. There is a little heat to this dish, if you are having issues with heartburn, or find there is too much spice you can always add more milk to balance it.

Return to pot and allow to cook 20 minutes more or until soup is heated through and is the consistency you desire.

Italian Wedding Soup

This is a great recipe for getting Vitamin B6, or Pyridoxine. In your first trimester, and all through your pregnancy, you need for vitamin B6 has increased by 1/3 from the time before you were expecting. This vitamin helps produce energy and helps your baby’s brain and nervous system to develop. Vitamin B6 also helps calm nausea for those experiencing morning sickness.

Ingredients
4 slices whole wheat bread
1/2 lb ground chicken
1 medium carrot, shredded
1/2 onion, grated
1 cup whole wheat bread crumbs
1 clove minced garlic
1 TBSP minced fresh basil
1/4 tsp dried oregano
3 eggs
6 cups low sodium chicken broth
1 cup whole wheat pasta (shell noodles if possible to catch some of the broth)
10 oz fresh spinach chopped finely, or one box of drained, thawed frozen spinach
Pepper to taste
Grated parmesan cheese

Lightly toast bread slices in the toaster or oven and cut into cubes.

In a large bowl mix chicken, carrot, onion, bread crumbs, garlic, basil, oregano and 1 egg. If mixture is too wet add more bread crumbs. Use hands to form 50 -60 small meatballs. Set aside.

In a stockpot boil broth over medium heat - add pasta and drop in meatballs a few at a time. Simmer for 5 minutes or until cooked (they will turn opaque when cooked). Add spinach and reduce heat to medium low. Season with black pepper.

In a bowl add remaining eggs and parmesan – mix until frothy. Pour mixture into soup and stir until eggs are cooked. Remove from heat.

To serve, place your bread cubes in the bottom of a bowl and pour soup over top. Garnish with additional basil.

Zinc

Did you know that your need for Zinc increases 1/4 when you are pregnant? But just what is Zinc and how do you get more of it into your diet?? It’s really quite easy.

Zinc is a mineral found in numerous vegetable and animal sources such as oysters (make sure they are cooked if you are expecting), shellfish, beans, cereals, whole grains, fish, dairy products, nuts and poultry. Zinc is better absorbed via animal sources than vegetable ones, but there are many ways to ensure you are getting your daily dose without eating meat.

Just what does Zinc do for you? All kinds of things! For Mom is it aids in digestion, metabolism, respiration and wound healing. Making this an essential nutrient for pregnant women – especially those hoping to deliver via C-section. For baby, it plays a role in the formation and development of organs, skeleton and internal systems such as nerves and circulation. For those couples looking to get pregnant, Zinc is considered an essential part of successful reproduction by helping to keep sperm and eggs healthy.

So much going on for one little nutrient!

Curried Mussels

This is a great recipe for getting a little more zinc into your diet which helps keep sperm and eggs healthy so is perfect for that couple trying to get pregnant and it also helps with wound healing – so it plays an important role for those who have just given birth. Zinc also helps in digestion and in the development of baby’s organs and skeleton among other things.

Ingredients
1 pound of cleaned fresh mussels
1/2 an onion, sliced
2 tsp curry powder
1 tsp tumeric
1 tsp garam marsala
water

In a large pot place mussel, onion and spices and fill with water. Boil until the mussels open slightly – about 6 to 9 minutes. If any of the mussels do not open after cooking, throw them away – they are not fit to be eaten.
